3 Vegetarian BBQ Recipes Under 500 Calories You Need to Try

Ingredients:

  • Soy sauce
  • Cilantro
  • Red pepper powder
  • Carrots, sliced Julian
  • Ginger
  • 1 lime, sliced
  • Zucchini
  • Tin foil
  • Peanuts

Grill the zucchini in sealed tin foil. You don’t necessarily want to barbeque it with direct heat, but you will want enough to bring the juices to a good simmer. This recipe demands lots of cilantro and as much ginger and red pepper powder as you see fit.

Let it simmer on the grill for 20 minutes at around 250 degrees and you are good to go! Add some crushed peanuts for the finishing touches!

2. Veggie Quesadillas

The whole-wheat veggie quesadilla is a simple yet sophisticated recipe. You have the ultimate freedom to be creative here, with the confidence that just about any variation will end up tasting delicious. You want to keep direct heat off of the tortilla, so tin foil is your friend.

Ingredients:

  • Whole-wheat tortillas
  • Red onion
  • Green onion
  • Diced tomatoes
  • Mixed, diced bell peppers
  • Mozzarella shredded cheese

This simple recipe requires you to dice up the vegetable ingredients as finely as desired. Add enough cheese to cover the ingredients and place your tortilla on top.  As the quesadilla cooks, apply firm pressure on the top. Flip and repeat as desired. You’ll want to aim for about 15 minutes of non-direct heat in total, which is about seven minutes per side. You will hear the song of the peppers when it is ready to eat, enjoy!

3. Sweet Potato and Egg Casserole

Talk about a delicious explosion of flavor! Who knew that vegetarian grilling could be so tasty? This recipe is all about texture and depth. The preparation is easy, and the end result is attainable with one of our best outdoor grills.

Ingredients:

  • Sweet potatoes (3 lbs. diced)
  • Red bell pepper (2 diced)
  • Red onion (1, diced)
  • Vegetable oil
  • 1 tablespoon of cumin, salt, and pepper
  • 6 eggs
  • 3 tablespoons of chopped cilantro

You will toss your sweet potatoes, peppers, onions, and seasonings into a large aluminum grilling tray and place on the barbeque. Grill for about 15 minutes at medium to high heat.  Give a big stir and grill for an additional 10 minutes.

Now you will create six indentions into your tray ingredients. It is here you will crack and place your eggs. Grill for another 10 minutes and you are ready to go. Top with the cilantro and bon appetit!
